Slow Cooker Goulash
A hearty and comforting slow-cooked goulash with tender beef, pasta, and a rich tomato sauce.
Ingredients
- 1½ lb beef chuck roast
- 1 yellow onion
- 3 clove garlic
- 28 oz diced tomatoes
- 15 oz tomato sauce
- 2 cup beef broth
- 1½ cup elbow macaroni
- 1 tbsp paprika
- 1 tsp dried oregano
- 1 bay leaf
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- ½ cup sour cream (optional)
- 2 tbsp fresh parsley (optional)
Steps
- Trim and cut beef chuck roast into 1-inch cubes. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, then transfer to the slow cooker.
- Add chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes. Transfer to the slow cooker.
- Add diced tomatoes, tomato sauce, beef broth, paprika, oregano, and bay leaf to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is very tender.
- About 30 minutes before serving, stir in the elbow macaroni. Cook until pasta is al dente.
- Remove the bay leaf. Taste and adjust seasonings as needed.
- Serve hot, optionally garnished with a dollop of sour cream and fresh chopped parsley.
