Slow Cooker Goulash

Ingredients

  • 1½ lb beef chuck roast
  • 1 yellow onion
  • 3 clove garlic
  • 28 oz diced tomatoes
  • 15 oz tomato sauce
  • 2 cup beef broth
  • 1½ cup elbow macaroni
  • 1 tbsp paprika
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup sour cream (optional)
  • 2 tbsp fresh parsley (optional)

Steps

  1. Trim and cut beef chuck roast into 1-inch cubes. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, then transfer to the slow cooker.
  3. Add chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes. Transfer to the slow cooker.
  4. Add diced tomatoes, tomato sauce, beef broth, paprika, oregano, and bay leaf to the slow cooker. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is very tender.
  6. About 30 minutes before serving, stir in the elbow macaroni. Cook until pasta is al dente.
  7. Remove the bay leaf. Taste and adjust seasonings as needed.
  8. Serve hot, optionally garnished with a dollop of sour cream and fresh chopped parsley.
