Slow Cooker Meatloaf
A classic comfort food, this slow cooker meatloaf is tender, juicy, and incredibly easy to prepare for a hearty family meal.
Ingredients
- 1½ lb ground beef, 80/20
- 1 egg
- ½ cup bread crumbs
- ½ onion
- 2 clove garlic
- ½ cup ketchup
- 1 tbsp Worcestershire sauce
- ½ tsp mustard powder
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp brown sugar (optional)
Steps
- Finely dice the onion and mince the garlic.
- In a large bowl, combine ground beef, egg, bread crumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until just combined, being careful not to overmix.
- Form the mixture into a loaf shape and place it in the slow cooker.
- In a small bowl, whisk together ketchup, mustard powder, and brown sugar (if using) for the glaze. Spread half of the glaze over the top of the meatloaf.
- Cook on low for 4-5 hours or on high for 2-3 hours, until the internal temperature reaches 160°F (71°C).
- During the last 30 minutes of cooking, spread the remaining glaze over the meatloaf.
- Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing and serving.
