Slow Cooker Meatloaf

A classic comfort food, this slow cooker meatloaf is tender, juicy, and incredibly easy to prepare for a hearty family meal.

Ingredients

  • 1½ lb ground beef, 80/20
  • 1 egg
  • ½ cup bread crumbs
  • ½ onion
  • 2 clove garlic
  • ½ cup ketchup
  • 1 tbsp Worcestershire sauce
  • ½ tsp mustard powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp brown sugar (optional)

Steps

  1. Finely dice the onion and mince the garlic.
  2. In a large bowl, combine ground beef, egg, bread crumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until just combined, being careful not to overmix.
  3. Form the mixture into a loaf shape and place it in the slow cooker.
  4. In a small bowl, whisk together ketchup, mustard powder, and brown sugar (if using) for the glaze. Spread half of the glaze over the top of the meatloaf.
  5. Cook on low for 4-5 hours or on high for 2-3 hours, until the internal temperature reaches 160°F (71°C).
  6. During the last 30 minutes of cooking, spread the remaining glaze over the meatloaf.
  7. Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing and serving.
