Slow Cooker Pulled Pork

Ingredients

  • 2½ lb pork shoulder (boston butt)
  • 1 medium onion
  • 3 clove garlic
  • ½ cup chicken broth
  • ¼ cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ¾ cup BBQ sauce (optional)
  • 4 hamburger buns (optional)

Steps

  1. Trim any excess fat from the pork shoulder and cut it into 2-3 large pieces. Season generously with salt and pepper.
  2. Dice the onion and mince the garlic. Place the pork pieces in the slow cooker.
  3. In a small bowl, whisk together chicken broth, apple cider vinegar, brown sugar, smoked paprika, chili powder, and cumin. Pour over the pork.
  4. Add the diced onion and minced garlic to the slow cooker.
  5. Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the pork is fork-tender.
  6. Carefully remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat.
  7. Return the shredded pork to the slow cooker and stir it into the cooking liquid. If desired, stir in BBQ sauce.
  8. Serve warm on hamburger buns or as desired.
