Smoked Eggplant Purée
A delightful Turkish side dish featuring smoky grilled eggplant mashed with tangy lemon, garlic, yogurt, and fresh dill.
Ingredients
- 2 medium eggplant
- 1 lemon
- 3 clove garlic
- ⅔ cup plain yogurt
- ½ bunch fresh dill
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat a grill to very hot. Slice the eggplant in half lengthwise.
- Grill eggplant halves for 25 minutes, turning occasionally, until the flesh is very soft.
- Remove eggplant from the grill and let them cool until easy to handle.
- Scoop out the soft eggplant flesh into a bowl and mash with a fork until a thick pulp forms.
- Beat in the lemon juice and crushed garlic.
- Stir in the yogurt and chopped fresh dill, then season with salt and pepper to taste.
- Serve the smoked eggplant purée warm.
