Sweet Potato Salad
A delightful Turkish-inspired sweet potato salad featuring tender roasted sweet potatoes, fresh herbs, and a tangy-sweet sherry vinaigrette.
Ingredients
- 1200 g sweet potatoes
- 1 tbsp olive oil
- 2 shallots
- 4 green onions
- 1 bunch chives
- 5 tbsp sherry vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp honey
- 1 pinch salt
- 1 pinch black pepper
Steps
- Preheat oven to 200C (400F). Toss sweet potato chunks with 1 tablespoon olive oil, salt, and pepper. Spread on a parchment-lined baking sheet.
- Roast for 30-35 minutes until tender and golden. Let cool to room temperature.
- While potatoes cool, finely chop the shallots, slice the green onions, and chop the chives.
- In a large bowl, whisk together sherry vinegar, extra virgin olive oil, honey, salt, and pepper for the dressing.
- Add the cooled sweet potatoes, chopped shallots, green onions, and chives to the dressing.
- Gently toss the salad with your hands to combine without breaking up the sweet potatoes. Serve immediately or chill.
