Sweet Potato Salad

A delightful Turkish-inspired sweet potato salad featuring tender roasted sweet potatoes, fresh herbs, and a tangy-sweet sherry vinaigrette.

Ingredients

  • 1200 g sweet potatoes
  • 1 tbsp olive oil
  • 2 shallots
  • 4 green onions
  • 1 bunch chives
  • 5 tbsp sherry vinegar
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 1 pinch salt
  • 1 pinch black pepper

Steps

  1. Preheat oven to 200C (400F). Toss sweet potato chunks with 1 tablespoon olive oil, salt, and pepper. Spread on a parchment-lined baking sheet.
  2. Roast for 30-35 minutes until tender and golden. Let cool to room temperature.
  3. While potatoes cool, finely chop the shallots, slice the green onions, and chop the chives.
  4. In a large bowl, whisk together sherry vinegar, extra virgin olive oil, honey, salt, and pepper for the dressing.
  5. Add the cooled sweet potatoes, chopped shallots, green onions, and chives to the dressing.
  6. Gently toss the salad with your hands to combine without breaking up the sweet potatoes. Serve immediately or chill.
