Smoked Sausage and Cabbage

Ingredients

  • 14 oz smoked sausage
  • 1 head green cabbage
  • 1 yellow onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • ½ cup chicken broth
  • 1 tbsp apple cider vinegar (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Slice the smoked sausage into 1/2-inch thick rounds. Core and chop the cabbage into 1-inch pieces. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove sausage and set aside.
  3. Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the chopped cabbage, chicken broth, salt, and pepper. Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the cabbage is tender-crisp.
  5. Return the cooked sausage to the skillet. Stir in apple cider vinegar, if using, and cook for an additional 2-3 minutes to heat through.
  6. Taste and adjust seasonings as needed. Garnish with fresh parsley, if desired, and serve hot.
