Smoked Sausage and Potatoes

Ingredients
- 12 oz smoked sausage
- 1½ lb potatoes
- 1 onion
- 1 bell pepper
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Slice the smoked sausage into 1/2-inch rounds. Dice the potatoes into 1-inch cubes. Chop the onion and bell pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the potatoes and cook for 8-10 minutes, stirring occasionally, until slightly browned and tender-crisp.
- Add the sliced sausage, chopped onion, and bell pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally, until vegetables are tender and sausage is lightly browned.
- Stir in the garlic powder, paprika, salt, and black pepper. Cook for 1-2 minutes more, ensuring all ingredients are well combined and heated through.
- Taste and adjust seasonings as needed. Garnish with fresh parsley if desired.
