Smoky Chicken Skewers

Tender chicken thighs are marinated in a smoky spice blend, skewered, and seared to perfection, ideal for a flavorful Turkish-inspired meal.

Ingredients

  • 1½ lb chicken thighs, boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp fennel seeds
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 clove garlic
  • 1 tsp red wine vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup smoky aioli (optional)
  • 10 wooden skewers (optional)

Steps

  1. If using wooden skewers, soak them in water for at least 10 minutes.
  2. Cut chicken thighs into 1-inch pieces. In a bowl, combine chicken with 1 tablespoon olive oil, fennel seeds, cumin, smoked paprika, crushed garlic, red wine vinegar, salt, and pepper. Toss well to coat.
  3. Thread 2-3 pieces of marinated chicken onto each skewer.
  4. Heat the remaining 1 tablespoon olive oil in a large frying pan or griddle pan over medium-high heat until hot.
  5. Sear the chicken skewers in batches for 3-4 minutes per side, until cooked through and nicely browned.
  6. Keep cooked skewers warm in a low oven while you cook remaining batches.
  7. Serve hot, optionally with smoky aioli.
