Smothered Pork Chops

Tender pork chops are seared and then simmered in a rich, savory onion gravy until incredibly tender and flavorful.

Ingredients

  • 1½ lb boneless pork chops
  • 1 yellow onion
  • 2 clove garlic
  • ¼ cup all-purpose flour
  • 2 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • ½ tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 2 tbsp fresh parsley (optional)

Steps

  1. Pat pork chops dry and season generously with salt, pepper, and paprika.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown, then remove and set aside.
  3. Add sliced onion to the skillet and cook until softened, about 5-7 minutes. Stir in minced garlic and dried thyme, cooking for another minute until fragrant.
  4. Sprinkle flour over the onions and cook, stirring constantly, for 1-2 minutes to create a roux.
  5. Gradually whisk in chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Bring the gravy to a simmer, stirring until it thickens.
  6. Return the seared pork chops to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 25-30 minutes, or until pork chops are very tender.
  7. Taste and adjust seasoning if needed. Garnish with fresh parsley, if desired, before serving.
