Smothered Pork Chops with Gravy
Tender pork chops browned and then simmered in a rich, savory gravy until fork-tender, perfect for a comforting meal.
Ingredients
- 1½ lb boneless pork chops
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp vegetable oil
- 1 medium yellow onion
- 2 clove garlic
- 2 cup chicken broth
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley (optional)
Steps
- Pat pork chops dry. In a shallow dish, combine flour, salt, and pepper. Dredge pork chops in the flour mixture, shaking off excess.
- Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown; remove from skillet and set aside.
- Add sliced onion to the skillet and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Sprinkle 2 tablespoons of the remaining flour mixture into the skillet with the onions and cook, stirring constantly, for 1-2 minutes to create a roux.
- Gradually whisk in chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, stirring until gravy thickens.
- Return pork chops to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 30-40 minutes, or until pork chops are very tender.
- Taste and adjust seasoning if needed. Garnish with fresh parsley, if desired, before serving.
