Southwest Beef Bowl

Ingredients

  • 1 lb ground beef, 85/15
  • 1½ cup brown rice
  • 3 cup water
  • 15 oz canned black beans
  • 15 oz canned corn
  • 2 tbsp taco seasoning
  • ¾ cup salsa (optional)
  • ½ cup sour cream (optional)
  • 1 cup cheddar cheese, shredded (optional)
  • 1 avocado (optional)
  • ¼ cup fresh cilantro (optional)
  • 1 lime (optional)
  • 1 tbsp olive oil

Steps

  1. Cook brown rice according to package instructions. While rice cooks, prepare other ingredients.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  3. Stir in taco seasoning, black beans (rinsed and drained), and corn (drained) into the skillet with the beef. Cook for 5-7 minutes, stirring occasionally, until heated through.
  4. Divide cooked rice among four bowls. Top each with the beef and bean mixture.
  5. Garnish bowls with desired toppings such as salsa, sour cream, shredded cheese, sliced avocado, fresh cilantro, and a squeeze of lime.
