Southwest Beef Bowl
A hearty and flavorful bowl featuring seasoned ground beef, black beans, corn, and fresh toppings over a bed of rice.
Ingredients
- 1 lb ground beef, 85/15
- 1½ cup brown rice
- 3 cup water
- 15 oz canned black beans
- 15 oz canned corn
- 2 tbsp taco seasoning
- ¾ cup salsa (optional)
- ½ cup sour cream (optional)
- 1 cup cheddar cheese, shredded (optional)
- 1 avocado (optional)
- ¼ cup fresh cilantro (optional)
- 1 lime (optional)
- 1 tbsp olive oil
Steps
- Cook brown rice according to package instructions. While rice cooks, prepare other ingredients.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Stir in taco seasoning, black beans (rinsed and drained), and corn (drained) into the skillet with the beef. Cook for 5-7 minutes, stirring occasionally, until heated through.
- Divide cooked rice among four bowls. Top each with the beef and bean mixture.
- Garnish bowls with desired toppings such as salsa, sour cream, shredded cheese, sliced avocado, fresh cilantro, and a squeeze of lime.
