Steak and Eggs
A classic hearty breakfast featuring perfectly cooked steak and fried eggs, ideal for a satisfying start to your day.
Ingredients
- 1½ lb sirloin steak
- 8 large eggs
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Pat the steaks dry with paper towels and season generously with salt and pepper on both sides.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Add steaks and sear for 3-5 minutes per side for medium-rare, or until desired doneness is reached. Remove steaks from pan and let rest on a cutting board, tented with foil.
- While steaks rest, reduce heat to medium. Add butter to the same skillet. Crack eggs directly into the pan, being careful not to break the yolks.
- Cook eggs for 2-3 minutes for runny yolks, or longer for firmer yolks, until whites are set. Season eggs with a pinch of salt and pepper.
- Slice the rested steak against the grain. Serve immediately with the fried eggs. Garnish with fresh parsley if desired.
