Ingredients

  • 1½ lb sirloin steak
  • 2 heads romaine lettuce
  • 1 pint cherry tomatoes
  • ½ red onion
  • 1 cucumber
  • 4 oz blue cheese crumbles
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¾ cup blue cheese dressing

Steps

  1. Pat the steak dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the steak for 3-5 minutes per side for medium-rare, or to your desired doneness. Remove from skillet and let rest for 5 minutes before slicing against the grain.
  3. While the steak rests, wash and chop the romaine lettuce. Halve the cherry tomatoes, thinly slice the red onion, and dice the cucumber.
  4. In a large bowl, combine the chopped romaine, cherry tomatoes, red onion, and cucumber.
  5. Add the sliced steak and blue cheese crumbles to the salad.
  6. Drizzle with blue cheese dressing and toss gently to combine. Serve immediately.
