Stuffed Bell Peppers
Hearty bell peppers filled with a savory mixture of ground beef, rice, and tomatoes, baked until tender.
Ingredients
- 4 bell peppers
- 1 lb ground beef
- ½ onion
- 2 clove garlic
- 1 cup cooked rice
- 14½ oz canned diced tomatoes
- 8 oz tomato sauce
- 1 tsp Worcestershire sauce
- ½ tsp dried oregano
- ¾ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheddar cheese (optional)
Steps
- Preheat oven to 375°F (190°C). Halve bell peppers lengthwise and remove seeds and membranes.
- Brown ground beef in a large skillet over medium heat. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in cooked rice, diced tomatoes, half of the tomato sauce, Worcestershire sauce, oregano, salt, and pepper. Mix well.
- Spoon the beef and rice mixture into the bell pepper halves. Place stuffed peppers in a baking dish.
- Pour the remaining tomato sauce over and around the peppers.
- Bake for 30-40 minutes, or until peppers are tender. Top with shredded cheese during the last 10 minutes, if desired.
