Stuffed Bell Peppers

Ingredients

  • 4 bell peppers
  • 1 lb ground beef
  • ½ onion
  • 2 clove garlic
  • 1 cup cooked rice
  • 14½ oz canned diced tomatoes
  • 8 oz tomato sauce
  • 1 tsp Worcestershire sauce
  • ½ tsp dried oregano
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese (optional)

Steps

  1. Preheat oven to 375°F (190°C). Halve bell peppers lengthwise and remove seeds and membranes.
  2. Brown ground beef in a large skillet over medium heat. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in cooked rice, diced tomatoes, half of the tomato sauce, Worcestershire sauce, oregano, salt, and pepper. Mix well.
  5. Spoon the beef and rice mixture into the bell pepper halves. Place stuffed peppers in a baking dish.
  6. Pour the remaining tomato sauce over and around the peppers.
  7. Bake for 30-40 minutes, or until peppers are tender. Top with shredded cheese during the last 10 minutes, if desired.
