Stuffed Bell Peppers with Ground Turkey
Hearty bell peppers filled with savory ground turkey, rice, and a rich tomato sauce, baked until tender.
Ingredients
- 4 Bell peppers
- 1 lb Ground turkey
- 1 cup Cooked rice
- 14½ oz Canned diced tomatoes
- 8 oz Tomato sauce
- ½ Onion
- 2 clove Garlic
- 1 tbsp Olive oil
- 1 tsp Italian seasoning
- ½ tsp Salt
- ¼ tsp Black pepper
- ½ cup Shredded cheddar cheese (optional)
- 2 tbsp Fresh parsley (optional)
Steps
- Preheat oven to 375°F (190°C). Halve bell peppers lengthwise and remove seeds. Place cut-side up in a baking dish.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Add ground turkey to the skillet and cook, breaking it apart, until browned. Drain any excess fat.
- Stir in cooked rice, diced tomatoes (undrained), half of the tomato sauce, Italian seasoning, salt, and pepper into the turkey mixture. Mix well.
- Spoon the turkey and rice mixture evenly into the bell pepper halves. Pour the remaining tomato sauce around the peppers in the baking dish.
- Cover the baking dish with foil and bake for 40 minutes. Uncover, sprinkle with shredded cheese if using, and bake for another 10-15 minutes, or until peppers are tender and cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, before serving.
