Stuffed Chicken Breast with Spinach and Feta

Ingredients

  • 4 boneless, skinless chicken breasts
  • 5 oz fresh spinach
  • 4 oz feta cheese, crumbled
  • 2 clove garlic, minced
  • 2 oz cream cheese, softened
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 toothpicks (optional)

Steps

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Sauté spinach and minced garlic in olive oil until spinach wilts. Squeeze out excess water. In a bowl, combine wilted spinach, feta cheese, cream cheese, oregano, salt, and pepper.
  3. Butterfly each chicken breast by slicing horizontally almost all the way through, then open it like a book. Season both sides of the chicken with a pinch of salt and pepper.
  4. Spoon an equal amount of the spinach and feta mixture into the center of each chicken breast. Fold the chicken over to enclose the filling and secure with toothpicks if needed.
  5. Place the stuffed chicken breasts in the prepared baking dish. Bake for 25-30 minutes, or until chicken is cooked through and juices run clear (internal temperature 165°F/74°C).
  6. Remove from oven, let rest for a few minutes, then remove toothpicks before serving.
