Swiss Steak
Tenderized beef braised in a rich tomato-vegetable sauce, perfect for a comforting family dinner.
Ingredients
- 1½ lb beef round steak
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp vegetable oil
- 1 medium onion
- 2 celery stalks
- 2 medium carrots
- 2 clove garlic
- 14½ oz canned diced tomatoes
- 1½ cup beef broth
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- 1 bay leaf
Steps
- Preheat oven to 325°F (160°C). Cut beef round steak into 4 equal portions. In a shallow dish, combine flour, salt, and pepper. Dredge each piece of beef in the flour mixture, pounding with a meat mallet or rolling pin to tenderize and ensure coating.
- Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown the floured beef on all sides, then remove and set aside.
- Add chopped onion, celery, and carrots to the pot. Sauté for 5-7 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Return the beef to the pot. Stir in diced tomatoes, beef broth, Worcestershire sauce, dried thyme, and bay leaf. Bring to a simmer.
- Cover the Dutch oven tightly and transfer to the preheated oven. Braise for 2 to 2.5 hours, or until the beef is very tender.
- Remove the bay leaf before serving. Serve hot with mashed potatoes or noodles.
