Tempeh Reuben Sandwiches

A vegetarian take on the classic Reuben, featuring pan-fried tempeh, sauerkraut, Swiss cheese, and Russian dressing on rye bread.

Ingredients

  • 16 oz tempeh
  • 8 slice rye bread
  • 4 slice Swiss cheese
  • 1½ cup sauerkraut
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • ½ tsp Worcestershire sauce (optional)
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Press and slice tempeh into 1/4-inch thick strips. In a bowl, whisk together mayonnaise, ketchup, sweet pickle relish, Worcestershire sauce (if using), onion powder, garlic powder, and paprika to make Russian dressing.
  2. Heat vegetable oil in a large skillet over medium heat. Add tempeh strips and cook for 3-4 minutes per side, until golden brown. Season with salt and pepper.
  3. Drain sauerkraut well. Spread Russian dressing on one side of each slice of rye bread.
  4. Assemble sandwiches: on the undressed side of 4 bread slices, layer tempeh, sauerkraut, and a slice of Swiss cheese. Top with the remaining bread slices, dressing-side down.
  5. Melt butter in the same skillet over medium-low heat. Place sandwiches in the skillet and grill for 3-5 minutes per side, until bread is golden brown and cheese is melted.
  6. Remove from skillet, slice in half, and serve immediately.
