Tempeh Reuben Sandwiches
A vegetarian take on the classic Reuben, featuring pan-fried tempeh, sauerkraut, Swiss cheese, and Russian dressing on rye bread.
Ingredients
- 16 oz tempeh
- 8 slice rye bread
- 4 slice Swiss cheese
- 1½ cup sauerkraut
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp sweet pickle relish
- ½ tsp Worcestershire sauce (optional)
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp paprika
- 2 tbsp vegetable oil
- 2 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Press and slice tempeh into 1/4-inch thick strips. In a bowl, whisk together mayonnaise, ketchup, sweet pickle relish, Worcestershire sauce (if using), onion powder, garlic powder, and paprika to make Russian dressing.
- Heat vegetable oil in a large skillet over medium heat. Add tempeh strips and cook for 3-4 minutes per side, until golden brown. Season with salt and pepper.
- Drain sauerkraut well. Spread Russian dressing on one side of each slice of rye bread.
- Assemble sandwiches: on the undressed side of 4 bread slices, layer tempeh, sauerkraut, and a slice of Swiss cheese. Top with the remaining bread slices, dressing-side down.
- Melt butter in the same skillet over medium-low heat. Place sandwiches in the skillet and grill for 3-5 minutes per side, until bread is golden brown and cheese is melted.
- Remove from skillet, slice in half, and serve immediately.
