Ingredients

  • 16 oz tempeh
  • 1 medium onion
  • 1 medium bell pepper
  • 2 clove garlic
  • 15 oz crushed tomatoes
  • ½ cup ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 4 hamburger buns

Steps

  1. Crumble the tempeh into small pieces using your hands or a fork.
  2. Dice the onion and bell pepper, and mince the garlic.
  3. Heat olive oil in a large skillet over medium heat. Add the crumbled tempeh and cook for 5-7 minutes, stirring occasionally, until lightly browned.
  4. Add the diced onion and bell pepper to the skillet and cook for another 5-7 minutes until softened. Stir in the minced garlic, chili powder, and smoked paprika, cooking for 1 minute until fragrant.
  5. Stir in the crushed tomatoes, ketchup, Dijon mustard, apple cider vinegar, brown sugar, salt, and black pepper. Bring the mixture to a simmer.
  6. Reduce heat to low, cover, and let simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  7. Serve the tempeh sloppy joe mixture hot on hamburger buns.
