Tempeh Sloppy Joes

Ingredients
- 16 oz tempeh
- 1 medium onion
- 1 medium bell pepper
- 2 clove garlic
- 15 oz crushed tomatoes
- ½ cup ketchup
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 4 hamburger buns
Steps
- Crumble the tempeh into small pieces using your hands or a fork.
- Dice the onion and bell pepper, and mince the garlic.
- Heat olive oil in a large skillet over medium heat. Add the crumbled tempeh and cook for 5-7 minutes, stirring occasionally, until lightly browned.
- Add the diced onion and bell pepper to the skillet and cook for another 5-7 minutes until softened. Stir in the minced garlic, chili powder, and smoked paprika, cooking for 1 minute until fragrant.
- Stir in the crushed tomatoes, ketchup, Dijon mustard, apple cider vinegar, brown sugar, salt, and black pepper. Bring the mixture to a simmer.
- Reduce heat to low, cover, and let simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
- Serve the tempeh sloppy joe mixture hot on hamburger buns.
