Three Fish Pie
A comforting British classic featuring a trio of fish in a creamy leek sauce, topped with cheesy mashed potatoes and baked until golden.
Ingredients
- 1½ lb potatoes
- 4 tbsp butter
- ¼ cup milk
- 2 oz Gruyere cheese
- 2 medium leeks
- ¼ cup all-purpose flour
- ½ cup dry white wine
- 2½ cups milk
- 2 tbsp fresh parsley
- 6 oz salmon fillet
- 6 oz haddock fillet
- 6 oz smoked haddock fillet
- 3 large eggs
- ½ tsp salt (optional)
- ¼ tsp black pepper (optional)
Steps
- Preheat oven to 400F (200C). Boil potatoes in salted water until tender, then drain and mash with 2 tbsp butter and 1/4 cup milk. Season with salt and pepper.
- Melt 2 tbsp butter in a saucepan, add sliced leeks, cover, and simmer for 10 minutes until soft. Whisk flour with white wine in a small bowl until smooth.
- Add 2.5 cups milk to leeks, bring to a boil, then whisk in the wine-flour mixture until thickened. Season with salt and pepper, then stir in chopped parsley and diced fish.
- Cook the fish mixture for 2 minutes, then spoon into an ovenproof casserole dish. Slice the hard-boiled eggs and scatter over the fish mixture.
- Spoon the mashed potatoes evenly over the fish, mark with a fork, and sprinkle with shredded Gruyere cheese.
- Bake for 30-40 minutes, or until the top is lightly golden-brown and the filling is bubbling around the edges.
