Traditional Croatian Goulash
A hearty and flavorful Croatian beef goulash, slow-cooked with vegetables, red wine, and aromatic spices until tender.
Ingredients
- 1⅛ lb beef
- 2 onion
- 2 carrot
- 2 clove garlic
- 2 bay leaf
- 0.85 cup red wine
- 8½ cup water
- 3 tbsp Dijon mustard
- 1 tbsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp vegetable oil
- 2 tbsp fresh parsley (optional)
- ½ fresh hot pepper (optional)
Steps
- Trim beef, cut into 1.5-inch pieces. Marinate beef with mustard, salt, pepper, and paprika for at least 1 hour in the refrigerator.
- Heat 1 tbsp vegetable oil in a large pot over medium-high heat. Brown the marinated beef on all sides in batches, then remove to a plate.
- Add remaining 1 tbsp oil to the pot. Add finely chopped onions and grated carrots. Cook over low heat for 15 minutes, stirring occasionally, until softened and slightly browned.
- Return beef to the pot, add bay leaves and minced garlic. Pour in red wine and simmer for 10-15 minutes to reduce.
- Add 5.5 cups of water to the pot. Bring to a simmer, then cover and cook over low heat for 1 hour, stirring occasionally.
- Pour in the remaining 3 cups of water and continue to cook for another 30-45 minutes, or until beef is very tender.
- Remove from heat, let cool slightly, then serve. Garnish with fresh parsley and sliced hot pepper, if desired.
