Traditional Croatian Goulash

A hearty and flavorful Croatian beef goulash, slow-cooked with vegetables, red wine, and aromatic spices until tender.

Ingredients

  • 1⅛ lb beef
  • 2 onion
  • 2 carrot
  • 2 clove garlic
  • 2 bay leaf
  • 0.85 cup red wine
  • 8½ cup water
  • 3 tbsp Dijon mustard
  • 1 tbsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp vegetable oil
  • 2 tbsp fresh parsley (optional)
  • ½ fresh hot pepper (optional)

Steps

  1. Trim beef, cut into 1.5-inch pieces. Marinate beef with mustard, salt, pepper, and paprika for at least 1 hour in the refrigerator.
  2. Heat 1 tbsp vegetable oil in a large pot over medium-high heat. Brown the marinated beef on all sides in batches, then remove to a plate.
  3. Add remaining 1 tbsp oil to the pot. Add finely chopped onions and grated carrots. Cook over low heat for 15 minutes, stirring occasionally, until softened and slightly browned.
  4. Return beef to the pot, add bay leaves and minced garlic. Pour in red wine and simmer for 10-15 minutes to reduce.
  5. Add 5.5 cups of water to the pot. Bring to a simmer, then cover and cook over low heat for 1 hour, stirring occasionally.
  6. Pour in the remaining 3 cups of water and continue to cook for another 30-45 minutes, or until beef is very tender.
  7. Remove from heat, let cool slightly, then serve. Garnish with fresh parsley and sliced hot pepper, if desired.
