Turkey and Black Bean Burgers

Ingredients

  • 1 lb ground turkey
  • 15 oz black beans
  • ½ red onion
  • 2 clove garlic
  • ½ cup breadcrumbs
  • 1 egg
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 4 hamburger buns
  • 4 lettuce leaves (optional)
  • 4 tomato slices (optional)
  • 2 tbsp ketchup (optional)
  • 2 tbsp mustard (optional)

Steps

  1. Drain and rinse black beans. Mash them roughly with a fork in a medium bowl.
  2. Finely dice the red onion and mince the garlic. Add to the bowl with mashed black beans.
  3. Add ground turkey, breadcrumbs, egg, chili powder, cumin, salt, and pepper to the bowl. Mix gently until just combined, being careful not to overmix.
  4. Divide the mixture into 4 equal portions and form into patties about 1-inch thick.
  5. Heat olive oil in a large skillet over medium heat. Cook patties for 5-7 minutes per side, or until internal temperature reaches 165°F and burgers are browned.
  6. Toast hamburger buns if desired.
  7. Serve the turkey and black bean burgers on toasted buns with lettuce, tomato, ketchup, and mustard, if using.
