Turkey Chili
A hearty and flavorful turkey chili, perfect for a comforting meal any time of year.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion
- 3 cloves garlic
- 1 medium bell pepper
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 14½ oz canned diced tomatoes
- 15 oz canned kidney beans
- 15 oz canned black beans
- 1½ cup chicken broth
- 1 tsp salt
- ½ tsp black pepper
- ½ cup shredded cheddar cheese (optional)
- ¼ cup sour cream (optional)
- 2 tbsp fresh cilantro (optional)
Steps
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion, bell pepper, and minced garlic to the pot. Sauté until vegetables are softened, about 5-7 minutes.
- Stir in chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
- Add diced tomatoes (undrained), rinsed and drained kidney beans, rinsed and drained black beans, and chicken broth. Season with salt and pepper.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro, if desired.
