Turkey Chili

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 medium bell pepper
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 14½ oz canned diced tomatoes
  • 15 oz canned kidney beans
  • 15 oz canned black beans
  • 1½ cup chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup sour cream (optional)
  • 2 tbsp fresh cilantro (optional)

Steps

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion, bell pepper, and minced garlic to the pot. Sauté until vegetables are softened, about 5-7 minutes.
  3. Stir in chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Add diced tomatoes (undrained), rinsed and drained kidney beans, rinsed and drained black beans, and chicken broth. Season with salt and pepper.
  5. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
  6. Taste and adjust seasonings as needed.
  7. Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro, if desired.
