Turkey Cutlets with Gravy
Quick-cooking turkey cutlets are pan-fried to golden perfection and served with a rich, savory gravy.
Ingredients
- 1½ lb turkey breast cutlets
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cups chicken broth
- 2 tbsp fresh parsley (optional)
Steps
- Pat turkey cutlets dry with paper towels. In a shallow dish, combine flour, salt, and pepper. Dredge each turkey cutlet in the flour mixture, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Add turkey cutlets and cook for 3-4 minutes per side, until golden brown and cooked through. Remove turkey from skillet and set aside on a plate.
- Reduce heat to medium. Add butter to the same skillet. Once melted, sprinkle in 2 tablespoons of the remaining flour mixture from the dish, whisking constantly for 1 minute to create a roux.
- Gradually whisk in chicken broth, stirring continuously to prevent lumps. Bring the gravy to a simmer and cook for 3-5 minutes, or until thickened to your desired consistency.
- Return the cooked turkey cutlets to the skillet with the gravy, turning to coat. Heat through for 1-2 minutes.
- Serve immediately, garnished with fresh parsley if desired.
