Turkey Goulash

Ingredients

  • 1 lb ground turkey
  • 8 oz elbow macaroni
  • 1 medium yellow onion
  • 2 cloves garlic
  • 14½ oz canned diced tomatoes
  • 15 oz canned tomato sauce
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp vegetable oil
  • ½ cup shredded cheddar cheese (optional)
  • 2 tbsp fresh parsley (optional)

Steps

  1. Chop the onion and mince the garlic.
  2. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add chopped onion and minced garlic to the skillet with the turkey. Sauté until the onion is softened, about 5 minutes.
  4. Stir in the diced tomatoes (undrained), tomato sauce, beef broth, Worcestershire sauce, paprika, oregano, salt, and pepper. Bring the mixture to a simmer.
  5. Add the elbow macaroni to the skillet, stirring to ensure it's fully submerged in the liquid. Cover, reduce heat to medium-low, and simmer for 12-15 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  6. Remove from heat. If desired, stir in shredded cheddar cheese until melted. Let stand for a few minutes before serving.
  7. Garnish with fresh parsley, if using, and serve hot.
