Turkey Meatball Subs
Hearty turkey meatballs simmered in marinara sauce, served in toasted hoagie rolls with melted provolone cheese for a comforting and satisfying sandwich.
Ingredients
- 1¼ lb ground turkey
- ½ cup breadcrumbs
- ¼ cup Parmesan cheese
- 1 egg
- 2 clove garlic
- 2 tbsp fresh parsley
- ½ tsp dried oregano
- ¾ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 24 oz marinara sauce
- 4 hoagie rolls
- 6 slice provolone cheese
Steps
- Preheat oven to 375°F (190°C). In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, oregano, salt, and pepper. Mix gently until just combined.
- Form the mixture into 16-20 meatballs, about 1.5 inches in diameter. Heat olive oil in a large skillet over medium-high heat.
- Sear the meatballs in the hot skillet for 2-3 minutes per side until browned all over. They don't need to be cooked through.
- Pour marinara sauce over the browned meatballs in the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until meatballs are cooked through.
- Slice the hoagie rolls lengthwise, without cutting all the way through. Place them on a baking sheet and toast in the preheated oven for 3-5 minutes until lightly golden.
- Spoon 4-5 meatballs and plenty of sauce into each toasted hoagie roll. Top with 1-2 slices of provolone cheese.
- Return the subs to the oven or place under a broiler for 2-3 minutes, until the cheese is melted and bubbly. Serve immediately.
