Turkey Pesto Melt

Ingredients

  • ¾ lb sliced deli turkey
  • 8 slice provolone cheese
  • 8 slice sourdough bread
  • ½ cup basil pesto
  • 2 tbsp butter
  • 1 tomato (optional)
  • ¼ red onion (optional)

Steps

  1. Spread a thin layer of butter on one side of each slice of bread.
  2. On the unbuttered side of 4 bread slices, spread pesto generously.
  3. Layer turkey and then 2 slices of provolone cheese on top of the pesto-covered bread. Add optional tomato and red onion if desired.
  4. Top with the remaining 4 slices of bread, buttered-side out.
  5. Heat a large skillet or griddle over medium heat.
  6. Place sandwiches in the hot skillet and cook for 3-5 minutes per side, until golden brown and the cheese is melted.
  7. Remove from skillet, slice in half, and serve immediately.
