Turkey Salisbury Steak

A lighter take on a classic comfort food, these savory turkey patties are smothered in a rich mushroom and onion gravy.

Ingredients

  • 1¼ lb ground turkey
  • ½ cup bread crumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 onion
  • 2 clove garlic
  • 8 oz cremini mushrooms
  • 2 cup beef broth
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Finely dice half of the onion and mince the garlic. Slice the mushrooms.
  2. In a large bowl, combine ground turkey, bread crumbs, egg, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 tablespoon Worcestershire sauce, Dijon mustard, and the finely diced onion and minced garlic. Mix gently until just combined, then form into 4 oval patties.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the turkey patties for 3-4 minutes per side, then remove from skillet and set aside.
  4. Add the remaining 1 tablespoon olive oil to the skillet. Add the sliced mushrooms and the remaining half of the onion (sliced or diced) and cook until softened, about 5-7 minutes.
  5. Sprinkle flour over the mushrooms and onions, stir, and cook for 1 minute. Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to low.
  6. Return the turkey patties to the skillet, nestling them into the gravy. Cover and simmer for 10-12 minutes, or until the patties are cooked through and the gravy has thickened.
  7. Season the gravy with remaining salt and pepper to taste. Garnish with fresh parsley, if using, before serving.
