Turkey Sausage and Pepper Skillet

Ingredients

  • 19 oz turkey sausage, Italian style
  • 3 bell peppers (any color)
  • 1 yellow onion
  • 3 clove garlic
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Slice the turkey sausage into 1/2-inch thick rounds. Core and slice bell peppers into strips. Halve and slice the yellow onion into thin strips. Mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add the sliced turkey sausage and cook until browned on all sides, about 5-7 minutes. Remove sausage from skillet and set aside.
  3. Add the sliced bell peppers and onion to the same skillet. Cook, stirring occasionally, until softened, about 8-10 minutes.
  4. Stir in the minced garlic, dried oregano, salt, and black pepper. Cook for 1 minute more until fragrant.
  5. Return the cooked sausage to the skillet with the vegetables. Toss to combine and heat through for 2-3 minutes.
  6. Garnish with fresh chopped parsley, if desired, and serve immediately.
