Ingredients

  • 16 oz turkey sausage, pre-cooked
  • 2 bell peppers, assorted colors
  • 1 zucchini
  • ½ red onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Slice the pre-cooked turkey sausage into 1/2-inch thick rounds.
  2. Chop bell peppers, zucchini, and red onion into 1-inch pieces. Mince the garlic.
  3. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 3-5 minutes until lightly browned, then remove from skillet and set aside.
  4. Add bell peppers, zucchini, and red onion to the same skillet. Sauté for 5-7 minutes until vegetables start to soften.
  5. Stir in minced garlic, oregano, smoked paprika, salt, and black pepper. Cook for another 1 minute until fragrant.
  6. Return the sausage to the skillet with the vegetables. Toss to combine and cook for 2-3 minutes more, ensuring everything is heated through.
  7. Garnish with fresh parsley, if desired, and serve immediately.
