Turkey Sausage and Veggie Skillet
A quick and healthy one-pan meal featuring savory turkey sausage and a colorful medley of roasted vegetables.
Ingredients
- 16 oz turkey sausage, pre-cooked
- 2 bell peppers, assorted colors
- 1 zucchini
- ½ red onion
- 2 clove garlic
- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Slice the pre-cooked turkey sausage into 1/2-inch thick rounds.
- Chop bell peppers, zucchini, and red onion into 1-inch pieces. Mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 3-5 minutes until lightly browned, then remove from skillet and set aside.
- Add bell peppers, zucchini, and red onion to the same skillet. Sauté for 5-7 minutes until vegetables start to soften.
- Stir in minced garlic, oregano, smoked paprika, salt, and black pepper. Cook for another 1 minute until fragrant.
- Return the sausage to the skillet with the vegetables. Toss to combine and cook for 2-3 minutes more, ensuring everything is heated through.
- Garnish with fresh parsley, if desired, and serve immediately.
