Vegetarian Chili

Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 clove garlic
  • 1 large bell pepper
  • 28 oz diced tomatoes
  • 15 oz kidney beans
  • 15 oz black beans
  • 2 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup corn (optional)
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup sour cream (optional)
  • ¼ cup fresh cilantro (optional)

Steps

  1. Dice the onion and bell pepper, and mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.
  4. Drain and rinse the kidney and black beans. Add diced tomatoes (undrained), rinsed beans, and vegetable broth to the pot. Bring to a simmer.
  5. Reduce heat to low, cover, and let the chili simmer for at least 20 minutes, or up to an hour, stirring occasionally. If using, stir in corn during the last 5 minutes.
  6. Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro if desired.
