Vegetarian Chili
A hearty and flavorful vegetarian chili packed with beans, vegetables, and aromatic spices, perfect for a comforting meal.
Ingredients
- 1 tbsp olive oil
- 1 medium yellow onion
- 3 clove garlic
- 1 large bell pepper
- 28 oz diced tomatoes
- 15 oz kidney beans
- 15 oz black beans
- 2 cup vegetable broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- 1 cup corn (optional)
- ½ cup shredded cheddar cheese (optional)
- ¼ cup sour cream (optional)
- ¼ cup fresh cilantro (optional)
Steps
- Dice the onion and bell pepper, and mince the garlic.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.
- Drain and rinse the kidney and black beans. Add diced tomatoes (undrained), rinsed beans, and vegetable broth to the pot. Bring to a simmer.
- Reduce heat to low, cover, and let the chili simmer for at least 20 minutes, or up to an hour, stirring occasionally. If using, stir in corn during the last 5 minutes.
- Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheese, sour cream, or fresh cilantro if desired.
