Vegetarian Chili
A hearty and comforting British vegetarian chili featuring roasted vegetables, kidney beans, and chopped tomatoes, served with mixed grains.
Ingredients
- 1½ lb mixed vegetables, chopped
- 15 oz kidney beans, canned
- 14½ oz chopped tomatoes, canned
- 8 oz mixed grains
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp chili powder (optional)
Steps
- Preheat oven to 400°F (200°C).
- Place chopped vegetables in a casserole dish and roast for 15 minutes.
- Stir in the drained kidney beans, chopped tomatoes, salt, pepper, and optional chili powder.
- Return to the oven and cook for another 10-15 minutes, or until bubbling hot.
- While the chili finishes, heat the mixed grains according to package instructions (typically 1 minute in microwave).
- Serve the vegetarian chili hot with the mixed grains.
