Beef Chimichangas

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 clove garlic
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup beef broth
  • 8 flour tortillas
  • 4 cup vegetable oil
  • 1 cup shredded cheddar cheese (optional)
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)

Steps

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until softened, about 5 minutes.
  3. Stir in chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in beef broth and simmer for 5-7 minutes, allowing the liquid to reduce and flavors to meld.
  5. Warm tortillas slightly. Spoon about 1/2 cup of beef filling onto the center of each tortilla, fold in the sides, then roll up tightly.
  6. Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C). Carefully place 1-2 chimichangas seam-side down into the hot oil.
  7. Fry for 2-4 minutes per side, or until golden brown and crispy. Remove with tongs and drain on a wire rack or paper towels.
  8. Serve hot, optionally topped with shredded cheese, sour cream, and salsa.
