Beef Chimichangas
Crispy deep-fried burritos filled with savory seasoned ground beef, perfect for a hearty Tex-Mex meal.
Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 clove garlic
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup beef broth
- 8 flour tortillas
- 4 cup vegetable oil
- 1 cup shredded cheddar cheese (optional)
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
Steps
- Brown ground beef in a large skillet over medium-high heat, breaking it apart. Drain excess fat.
- Add chopped onion and minced garlic to the skillet, cooking until softened, about 5 minutes.
- Stir in chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in beef broth and simmer for 5-7 minutes, allowing the liquid to reduce and flavors to meld.
- Warm tortillas slightly. Spoon about 1/2 cup of beef filling onto the center of each tortilla, fold in the sides, then roll up tightly.
- Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C). Carefully place 1-2 chimichangas seam-side down into the hot oil.
- Fry for 2-4 minutes per side, or until golden brown and crispy. Remove with tongs and drain on a wire rack or paper towels.
- Serve hot, optionally topped with shredded cheese, sour cream, and salsa.
