Breakfast Burritos
A hearty and satisfying breakfast burrito packed with scrambled eggs, cheese, and your favorite fillings, perfect for a grab-and-go meal.
Ingredients
- 4 large flour tortillas
- 8 large eggs
- 1 cup shredded cheddar cheese
- ½ lb cooked breakfast sausage or bacon (optional)
- ½ cup diced bell pepper (optional)
- ¼ cup diced onion (optional)
- 2 tbsp milk or cream (optional)
- 1 tbsp butter or oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup salsa (optional)
- 1 tsp hot sauce (optional)
Steps
- Whisk eggs with milk (if using), salt, and pepper in a bowl.
- Heat butter or oil in a non-stick skillet over medium heat. If using, cook bell peppers and onions until softened.
- Pour egg mixture into the skillet. Scramble eggs until cooked through but still moist. If using, stir in cooked sausage or bacon.
- Warm tortillas in a microwave or dry skillet until pliable.
- Lay out each tortilla and fill the center with a quarter of the scrambled egg mixture and a sprinkle of cheese.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a burrito.
- Serve immediately with salsa or hot sauce, if desired, or wrap in foil for later.
