Breakfast Burritos

Ingredients

  • 4 large flour tortillas
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • ½ lb cooked breakfast sausage or bacon (optional)
  • ½ cup diced bell pepper (optional)
  • ¼ cup diced onion (optional)
  • 2 tbsp milk or cream (optional)
  • 1 tbsp butter or oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup salsa (optional)
  • 1 tsp hot sauce (optional)

Steps

  1. Whisk eggs with milk (if using), salt, and pepper in a bowl.
  2. Heat butter or oil in a non-stick skillet over medium heat. If using, cook bell peppers and onions until softened.
  3. Pour egg mixture into the skillet. Scramble eggs until cooked through but still moist. If using, stir in cooked sausage or bacon.
  4. Warm tortillas in a microwave or dry skillet until pliable.
  5. Lay out each tortilla and fill the center with a quarter of the scrambled egg mixture and a sprinkle of cheese.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a burrito.
  7. Serve immediately with salsa or hot sauce, if desired, or wrap in foil for later.
