Broccoli Cheddar Chicken and Rice
A comforting and cheesy one-pan meal featuring tender chicken, fresh broccoli, and fluffy rice.
Ingredients
- 1½ lb chicken breast
- 4 cup broccoli florets
- 1½ cup white rice
- 3 cup chicken broth
- 1½ cup cheddar cheese
- 10½ oz cream of chicken soup
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
Steps
- Preheat oven to 375 F (190 C).
- In a large baking dish, combine uncooked rice, chicken broth, cream of chicken soup, onion powder, garlic powder, salt, and pepper.
- Stir in the diced chicken breast and broccoli florets.
- Cover the baking dish tightly with foil and bake for 30 minutes.
- Remove foil, stir gently, then sprinkle with shredded cheddar cheese.
- Bake uncovered for another 10-15 minutes, or until cheese is melted and bubbly and rice is tender.
