Chicken Burrito Bowl
A vibrant and satisfying deconstructed burrito served in a bowl, featuring seasoned chicken, rice, beans, and fresh toppings.
Ingredients
- 1½ lb chicken breast
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- 1 cup long-grain rice
- 2 cup water
- 15 oz black beans
- 1 cup corn kernels
- ¾ cup salsa
- 1 avocado
- 1 lime
- ¼ cup cilantro (optional)
- ½ cup sour cream (optional)
Steps
- Cook rice according to package directions.
- While rice cooks, cut chicken into 1-inch pieces. Heat olive oil in a large skillet over medium-high heat. Add chicken and taco seasoning; cook until chicken is browned and cooked through, about 5-7 minutes.
- Drain and rinse black beans.
- To assemble bowls, divide cooked rice among 4 bowls. Top with seasoned chicken, black beans, corn, and salsa.
- Slice avocado and squeeze lime juice over it. Add avocado slices to bowls.
- Garnish with fresh cilantro and a dollop of sour cream, if desired.
