Ingredients

  • 1½ lb chicken breast
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup long-grain rice
  • 2 cup water
  • 15 oz black beans
  • 1 cup corn kernels
  • ¾ cup salsa
  • 1 avocado
  • 1 lime
  • ¼ cup cilantro (optional)
  • ½ cup sour cream (optional)

Steps

  1. Cook rice according to package directions.
  2. While rice cooks, cut chicken into 1-inch pieces. Heat olive oil in a large skillet over medium-high heat. Add chicken and taco seasoning; cook until chicken is browned and cooked through, about 5-7 minutes.
  3. Drain and rinse black beans.
  4. To assemble bowls, divide cooked rice among 4 bowls. Top with seasoned chicken, black beans, corn, and salsa.
  5. Slice avocado and squeeze lime juice over it. Add avocado slices to bowls.
  6. Garnish with fresh cilantro and a dollop of sour cream, if desired.
