Chicken Quinoa Greek Salad
A refreshing and hearty Greek-inspired salad featuring tender griddled chicken, fluffy quinoa, briny olives, tangy feta, and fresh mint, all brought together with a zesty lemon dressing.
Ingredients
- ½ lb quinoa
- 1 lb chicken breast
- 25 g butter
- 1 red chili
- 1 clove garlic
- 2 tbsp olive oil
- ½ cup black olives
- 1 red onion
- ¼ lb feta cheese
- ¼ cup fresh mint
- ½ lemon
- 1 tsp salt
- ½ tsp black pepper
Steps
- Cook quinoa according to package directions. Rinse with cold water and drain thoroughly.
- While quinoa cooks, finely chop red chili and garlic. Mash with butter to form a paste.
- Season chicken breasts with salt and pepper. Toss with 1 tablespoon olive oil.
- Heat a griddle pan over medium-high heat. Cook chicken for 3-4 minutes per side, until cooked through.
- Transfer chicken to a plate, dot with spicy butter, and let melt. Slice chicken.
- In a large bowl, combine cooked quinoa, chopped red onion, black olives, crumbled feta, and chopped mint.
- Whisk remaining 1 tablespoon olive oil with lemon juice. Pour over salad and toss to combine. Season well.
- Serve salad topped with sliced chicken and any buttery pan juices.
