Chicken Tenders & Sweet Potato Fries
Crispy chicken tenders paired with perfectly seasoned sweet potato fries make for a satisfying and easy meal.
Ingredients
- 1½ lb chicken breast tenders
- 2 large sweet potatoes
- ½ cup all-purpose flour
- 2 egg
- 1 cup panko breadcrumbs
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- ¼ cup honey mustard (optional)
Steps
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut sweet potatoes into 1/4-inch thick fries. Toss with 1 tbsp olive oil, 1/2 tsp paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on the baking sheet.
- Bake sweet potato fries for 20 minutes, then flip and bake for another 10-15 minutes, until crispy and tender.
- While fries bake, set up a breading station: one shallow dish with flour, one with beaten eggs, and one with panko mixed with remaining paprika, salt, and pepper.
- Dip each chicken tender in flour, then egg, then panko, pressing to coat well.
- Place breaded chicken tenders on a separate baking sheet or alongside the fries if space allows. Drizzle with remaining 1 tbsp olive oil.
- Bake chicken tenders for 15-20 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
- Serve chicken tenders hot with sweet potato fries and honey mustard for dipping, if desired.
