Chicken Tenders & Sweet Potato Fries

Ingredients

  • 1½ lb chicken breast tenders
  • 2 large sweet potatoes
  • ½ cup all-purpose flour
  • 2 egg
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • ¼ cup honey mustard (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut sweet potatoes into 1/4-inch thick fries. Toss with 1 tbsp olive oil, 1/2 tsp paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on the baking sheet.
  3. Bake sweet potato fries for 20 minutes, then flip and bake for another 10-15 minutes, until crispy and tender.
  4. While fries bake, set up a breading station: one shallow dish with flour, one with beaten eggs, and one with panko mixed with remaining paprika, salt, and pepper.
  5. Dip each chicken tender in flour, then egg, then panko, pressing to coat well.
  6. Place breaded chicken tenders on a separate baking sheet or alongside the fries if space allows. Drizzle with remaining 1 tbsp olive oil.
  7. Bake chicken tenders for 15-20 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
  8. Serve chicken tenders hot with sweet potato fries and honey mustard for dipping, if desired.
