Classic Meatloaf with Mashed Potatoes

Ingredients

  • 1½ lb ground beef
  • ½ cup onion
  • 2 clove garlic
  • ½ cup bread crumbs
  • 1 egg
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 lb potatoes (Russet or Yukon Gold)
  • ½ cup milk
  • 4 tbsp butter

Steps

  1. Preheat oven to 350°F (175°C). Finely chop onion and mince garlic.
  2. In a large bowl, combine ground beef, onion, garlic, bread crumbs, egg, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until just combined.
  3. Form the mixture into a loaf shape and place it in a baking dish. Spread ketchup evenly over the top of the meatloaf.
  4. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
  5. While meatloaf bakes, peel and quarter potatoes. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  6. Drain potatoes thoroughly. Return to the hot pot. Add milk and butter, then mash until smooth and creamy. Season with salt and pepper to taste.
  7. Slice the rested meatloaf and serve immediately with the mashed potatoes.
