Classic Meatloaf with Mashed Potatoes
A comforting American classic featuring a savory meatloaf served alongside creamy, buttery mashed potatoes.
Ingredients
- 1½ lb ground beef
- ½ cup onion
- 2 clove garlic
- ½ cup bread crumbs
- 1 egg
- ¼ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp salt
- ½ tsp black pepper
- 2 lb potatoes (Russet or Yukon Gold)
- ½ cup milk
- 4 tbsp butter
Steps
- Preheat oven to 350°F (175°C). Finely chop onion and mince garlic.
- In a large bowl, combine ground beef, onion, garlic, bread crumbs, egg, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until just combined.
- Form the mixture into a loaf shape and place it in a baking dish. Spread ketchup evenly over the top of the meatloaf.
- Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
- While meatloaf bakes, peel and quarter potatoes. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain potatoes thoroughly. Return to the hot pot. Add milk and butter, then mash until smooth and creamy. Season with salt and pepper to taste.
- Slice the rested meatloaf and serve immediately with the mashed potatoes.
