Lamb Souvlaki
Enjoy flavorful grilled lamb skewers marinated in lemon, garlic, and herbs, served with warm pita bread and a refreshing tzatziki sauce.
Ingredients
- 1½ lb boneless leg of lamb
- 2 lemon
- 4 clove garlic
- 2 tsp dried oregano
- 1 Tbsp fresh rosemary
- ¼ cup olive oil
- 1 tsp salt
- ½ tsp black pepper
- 4 pita bread
- ¾ cup tzatziki sauce (optional)
- ½ red onion (optional)
- 1 cup cherry tomatoes (optional)
Steps
- Cut the lamb into 1-inch cubes. In a bowl, whisk together the juice of 1 lemon, minced garlic, oregano, chopped rosemary, olive oil, salt, and pepper.
- Add the lamb cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes, or up to 4 hours.
- Thread the marinated lamb onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
- Preheat your grill to medium-high heat. Grill the lamb skewers for 3-4 minutes per side, or until cooked to your desired doneness.
- Warm the pita bread on the grill for 30 seconds per side, or until lightly toasted.
- Serve the grilled lamb souvlaki immediately with warm pita bread, a squeeze of fresh lemon juice, and optional tzatziki, sliced red onion, and cherry tomatoes.
