Lamb Souvlaki

Ingredients

  • 1½ lb boneless leg of lamb
  • 2 lemon
  • 4 clove garlic
  • 2 tsp dried oregano
  • 1 Tbsp fresh rosemary
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 pita bread
  • ¾ cup tzatziki sauce (optional)
  • ½ red onion (optional)
  • 1 cup cherry tomatoes (optional)

Steps

  1. Cut the lamb into 1-inch cubes. In a bowl, whisk together the juice of 1 lemon, minced garlic, oregano, chopped rosemary, olive oil, salt, and pepper.
  2. Add the lamb cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Thread the marinated lamb onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
  4. Preheat your grill to medium-high heat. Grill the lamb skewers for 3-4 minutes per side, or until cooked to your desired doneness.
  5. Warm the pita bread on the grill for 30 seconds per side, or until lightly toasted.
  6. Serve the grilled lamb souvlaki immediately with warm pita bread, a squeeze of fresh lemon juice, and optional tzatziki, sliced red onion, and cherry tomatoes.
