Meatball Subs
Hearty and satisfying, these classic meatball subs feature tender meatballs simmered in marinara sauce, piled high on toasted hoagie rolls with melted provolone cheese.
Ingredients
- 1 lb ground beef
- ½ lb Italian sausage (optional)
- ½ cup breadcrumbs
- ¼ cup Parmesan cheese
- 1 egg
- 2 clove garlic
- 2 tbsp fresh parsley
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 24 oz marinara sauce
- 4 hoagie rolls
- 6 slice provolone cheese
Steps
- In a large bowl, combine ground beef (and sausage if using), breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper. Mix gently until just combined.
- Form the mixture into 1-inch meatballs.
- Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, working in batches if necessary, then remove from skillet.
- Pour marinara sauce into the skillet, bring to a simmer, then return the browned meatballs to the sauce. Reduce heat to low, cover, and simmer for 20-25 minutes, or until meatballs are cooked through.
- Preheat oven to 375°F (190°C). Slice hoagie rolls lengthwise, without cutting all the way through.
- Spoon meatballs and sauce into each hoagie roll. Top with provolone cheese.
- Place subs on a baking sheet and bake for 5-7 minutes, or until cheese is melted and bubbly and rolls are lightly toasted.
