Meatball Subs

Hearty and satisfying, these classic meatball subs feature tender meatballs simmered in marinara sauce, piled high on toasted hoagie rolls with melted provolone cheese.

Ingredients

  • 1 lb ground beef
  • ½ lb Italian sausage (optional)
  • ½ cup breadcrumbs
  • ¼ cup Parmesan cheese
  • 1 egg
  • 2 clove garlic
  • 2 tbsp fresh parsley
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 24 oz marinara sauce
  • 4 hoagie rolls
  • 6 slice provolone cheese

Steps

  1. In a large bowl, combine ground beef (and sausage if using), breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, working in batches if necessary, then remove from skillet.
  4. Pour marinara sauce into the skillet, bring to a simmer, then return the browned meatballs to the sauce. Reduce heat to low, cover, and simmer for 20-25 minutes, or until meatballs are cooked through.
  5. Preheat oven to 375°F (190°C). Slice hoagie rolls lengthwise, without cutting all the way through.
  6. Spoon meatballs and sauce into each hoagie roll. Top with provolone cheese.
  7. Place subs on a baking sheet and bake for 5-7 minutes, or until cheese is melted and bubbly and rolls are lightly toasted.
