Ingredients

  • 4 eggs
  • 3 tbsp tomato sauce
  • 1 tbsp olive oil
  • 1 shallot
  • 1 celery stalk
  • 1 clove garlic
  • 1 cup spinach
  • ½ cup feta cheese
  • ½ red bell pepper
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 slices fresh bread (optional)

Steps

  1. Heat olive oil in a pan over medium-high heat.
  2. Add chopped shallot, garlic, celery, and red bell pepper to the pan and sauté for 5 minutes until softened.
  3. Stir in ground cumin, salt, black pepper, and tomato sauce. Cook for another 7 minutes, allowing the flavors to meld.
  4. Carefully crack the eggs directly into the sauce. Cover the pan and cook for 8 minutes, or until the eggs reach your desired doneness.
  5. Remove from heat, then stir in fresh spinach and crumble feta cheese over the top.
  6. Serve immediately, optionally with fresh bread.
