Shakshuka with Feta Cheese
A flavorful Saudi Arabian shakshuka featuring a rich tomato sauce, tender vegetables, and eggs, finished with fresh spinach and crumbled feta cheese.
Ingredients
- 4 eggs
- 3 tbsp tomato sauce
- 1 tbsp olive oil
- 1 shallot
- 1 celery stalk
- 1 clove garlic
- 1 cup spinach
- ½ cup feta cheese
- ½ red bell pepper
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp black pepper
- 4 slices fresh bread (optional)
Steps
- Heat olive oil in a pan over medium-high heat.
- Add chopped shallot, garlic, celery, and red bell pepper to the pan and sauté for 5 minutes until softened.
- Stir in ground cumin, salt, black pepper, and tomato sauce. Cook for another 7 minutes, allowing the flavors to meld.
- Carefully crack the eggs directly into the sauce. Cover the pan and cook for 8 minutes, or until the eggs reach your desired doneness.
- Remove from heat, then stir in fresh spinach and crumble feta cheese over the top.
- Serve immediately, optionally with fresh bread.
