Smothered Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 yellow onion
  • 2 clove garlic
  • 2 cup chicken broth
  • ½ cup heavy cream (optional)
  • 2 tbsp fresh parsley (optional)

Steps

  1. Pat chicken breasts dry and season with half of the salt and pepper. In a shallow dish, combine flour, paprika, garlic powder, onion powder, and remaining salt and pepper.
  2. Dredge each chicken breast in the seasoned flour, shaking off excess. Heat oil in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more.
  5. Whisk in any remaining seasoned flour from the dish, then gradually add chicken broth, stirring constantly to prevent lumps. Bring to a simmer.
  6. Return chicken to the skillet, reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender. Stir in heavy cream if using.
  7. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.
