Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 clove garlic
  • 14½ oz diced tomatoes
  • 8 oz tomato sauce
  • 15 oz kidney beans
  • 15 oz black beans
  • 15 oz corn
  • 1 oz taco seasoning
  • 1 oz ranch seasoning mix
  • 2 cup beef broth
  • ½ cup shredded cheddar cheese (optional)
  • ½ cup sour cream (optional)
  • 2 cup tortilla chips (optional)

Steps

  1. Brown ground beef in a large pot or Dutch oven over medium heat. Drain any excess fat.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in diced tomatoes (undrained), tomato sauce, kidney beans (rinsed and drained), black beans (rinsed and drained), corn (drained), taco seasoning, and ranch seasoning mix.
  4. Pour in beef broth and bring the mixture to a simmer.
  5. Reduce heat to low, cover, and let the soup simmer for at least 15-20 minutes to allow flavors to meld.
  6. Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
