Taco Soup
A hearty and flavorful soup packed with classic taco ingredients, perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 clove garlic
- 14½ oz diced tomatoes
- 8 oz tomato sauce
- 15 oz kidney beans
- 15 oz black beans
- 15 oz corn
- 1 oz taco seasoning
- 1 oz ranch seasoning mix
- 2 cup beef broth
- ½ cup shredded cheddar cheese (optional)
- ½ cup sour cream (optional)
- 2 cup tortilla chips (optional)
Steps
- Brown ground beef in a large pot or Dutch oven over medium heat. Drain any excess fat.
- Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
- Stir in diced tomatoes (undrained), tomato sauce, kidney beans (rinsed and drained), black beans (rinsed and drained), corn (drained), taco seasoning, and ranch seasoning mix.
- Pour in beef broth and bring the mixture to a simmer.
- Reduce heat to low, cover, and let the soup simmer for at least 15-20 minutes to allow flavors to meld.
- Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
