Tofu Fajita Bowls
Flavorful and vibrant tofu fajita bowls packed with seasoned tofu, colorful bell peppers, onions, and your favorite toppings.
Ingredients
- 14 oz extra-firm tofu
- 3 bell peppers
- 1 yellow onion
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¾ tsp salt
- ¼ tsp black pepper
- 1 lime
- 3 cup cooked rice
- 1 avocado (optional)
- ½ cup salsa (optional)
- ¼ cup fresh cilantro (optional)
Steps
- Press the tofu to remove excess water, then cut into 1/2-inch strips or cubes.
- Slice the bell peppers and onion into thin strips.
- In a large bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Add the tofu, bell peppers, and onion, tossing to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned tofu and vegetables and cook for 10-15 minutes, stirring occasionally, until vegetables are tender-crisp and tofu is lightly browned.
- Squeeze the juice of one lime over the cooked fajita mixture.
- Divide the cooked rice among four bowls. Top with the tofu and vegetable fajita mixture.
- Garnish with sliced avocado, salsa, and fresh cilantro, if desired.
