Tofu Fajita Bowls

Ingredients

  • 14 oz extra-firm tofu
  • 3 bell peppers
  • 1 yellow onion
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 lime
  • 3 cup cooked rice
  • 1 avocado (optional)
  • ½ cup salsa (optional)
  • ¼ cup fresh cilantro (optional)

Steps

  1. Press the tofu to remove excess water, then cut into 1/2-inch strips or cubes.
  2. Slice the bell peppers and onion into thin strips.
  3. In a large bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Add the tofu, bell peppers, and onion, tossing to coat evenly.
  4. Heat olive oil in a large skillet over medium-high heat. Add the seasoned tofu and vegetables and cook for 10-15 minutes, stirring occasionally, until vegetables are tender-crisp and tofu is lightly browned.
  5. Squeeze the juice of one lime over the cooked fajita mixture.
  6. Divide the cooked rice among four bowls. Top with the tofu and vegetable fajita mixture.
  7. Garnish with sliced avocado, salsa, and fresh cilantro, if desired.
