Turkey and Black Bean Burrito Bowls

Ingredients
- 1 lb ground turkey
- 15 oz black beans, canned
- 1½ cup corn, frozen or canned
- 1 cup white or brown rice
- 2 cup water
- 2 tbsp taco seasoning
- 1 tbsp olive oil
- ½ cup salsa (optional)
- 2 avocado (optional)
- 1 lime (optional)
- ¼ cup cilantro (optional)
- ½ cup Greek yogurt or sour cream (optional)
Steps
- Cook rice according to package directions. For white rice, combine 1 cup rice with 2 cups water in a pot, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
- While rice cooks, heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in taco seasoning, black beans (rinsed and drained), and corn into the skillet with the turkey. Cook for another 3-5 minutes, stirring occasionally, until heated through.
- To assemble bowls, divide the cooked rice among 4 bowls. Top each with the turkey and bean mixture.
- Garnish with desired toppings such as salsa, sliced avocado, a squeeze of fresh lime juice, chopped cilantro, or a dollop of Greek yogurt/sour cream.
