Turkey and Black Bean Burrito Bowls

Ingredients

  • 1 lb ground turkey
  • 15 oz black beans, canned
  • 1½ cup corn, frozen or canned
  • 1 cup white or brown rice
  • 2 cup water
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • ½ cup salsa (optional)
  • 2 avocado (optional)
  • 1 lime (optional)
  • ¼ cup cilantro (optional)
  • ½ cup Greek yogurt or sour cream (optional)

Steps

  1. Cook rice according to package directions. For white rice, combine 1 cup rice with 2 cups water in a pot, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
  2. While rice cooks, heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in taco seasoning, black beans (rinsed and drained), and corn into the skillet with the turkey. Cook for another 3-5 minutes, stirring occasionally, until heated through.
  4. To assemble bowls, divide the cooked rice among 4 bowls. Top each with the turkey and bean mixture.
  5. Garnish with desired toppings such as salsa, sliced avocado, a squeeze of fresh lime juice, chopped cilantro, or a dollop of Greek yogurt/sour cream.
