Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • ½ yellow onion
  • 2 clove garlic
  • 2 tbsp taco seasoning
  • ¼ cup water
  • 6 cup romaine lettuce
  • 1 cup cherry tomatoes
  • 15 oz black beans
  • 1 cup corn
  • 1 avocado
  • 1 lime
  • ¼ cup cilantro (optional)
  • ½ cup sour cream (optional)
  • ½ cup shredded cheese (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned.
  2. Drain any excess fat. Add chopped onion and minced garlic to the skillet, cooking until softened, about 3-5 minutes.
  3. Stir in taco seasoning and water. Bring to a simmer and cook until the liquid has mostly evaporated, about 5-7 minutes.
  4. While turkey cooks, prepare your bowls: divide romaine lettuce among 4 bowls.
  5. Add cherry tomatoes, drained black beans, and corn to each bowl.
  6. Top each bowl with the seasoned turkey mixture. Slice avocado and add to bowls.
  7. Squeeze fresh lime juice over the bowls. Garnish with cilantro, sour cream, or shredded cheese if desired.
