Turkey Taco Bowls

Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- ½ yellow onion
- 2 clove garlic
- 2 tbsp taco seasoning
- ¼ cup water
- 6 cup romaine lettuce
- 1 cup cherry tomatoes
- 15 oz black beans
- 1 cup corn
- 1 avocado
- 1 lime
- ¼ cup cilantro (optional)
- ½ cup sour cream (optional)
- ½ cup shredded cheese (optional)
Steps
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned.
- Drain any excess fat. Add chopped onion and minced garlic to the skillet, cooking until softened, about 3-5 minutes.
- Stir in taco seasoning and water. Bring to a simmer and cook until the liquid has mostly evaporated, about 5-7 minutes.
- While turkey cooks, prepare your bowls: divide romaine lettuce among 4 bowls.
- Add cherry tomatoes, drained black beans, and corn to each bowl.
- Top each bowl with the seasoned turkey mixture. Slice avocado and add to bowls.
- Squeeze fresh lime juice over the bowls. Garnish with cilantro, sour cream, or shredded cheese if desired.
